Vegan Gingerbread / Gingerbread Cookies


How to make: Vegan Gingerbread / Gingerbread Cookies


  • 225g Flour (i take the 405)
  • 150g Semolina (the soft one)
  • 1 Pck of Gingerbread Spice
  • 2 Teaspoons Backing Powder
  • 1 Pinch of Salt
  • 150g sugar beet Syrup (dark syrup)
  • 75g brown sugar (but white is also good)
  • 125g vegan Margarine
  • small pinch of cinnamon
For the finish:
  • 200g Dark Chocolate (i take "Block" Chocolate)
  • 100g shredded coconut

Mix the Flour, Semolina, Gingerbread Spice, Backing Powder and the Salt together - now you have a copper color looking Flour.
Put the Syrup, Sugar and Margarine into a Bowl and mix it with your dough hooks on your Hand Mixer - add the Flour Mix slowly with a Tablespoon into the Bowl and Mix it togehter. (alway a spoon after another)
When its done, let the dough mix Rest for 15min.
In this Time, Preheat the oven to 200 degrees, and lower the Temperature to 170 degrees before you put the Gingerbreads in.

  • For Gingerbread:
Roll out the Dough (Finger Thick) and take a Glas to cut out Round Gingerbreads. To get Soft Gingerbreads let them Bake about 10-12 minutes.

  • For Gingerbread Cookies:
Roll out the Dough thin, and take a Glas to cut out Round Gingerbreads. To get Gingerbread Cookies let them Bake about 15 minutes.
